Kulambu, in Tamil means thick lava like liquid. Being an island, Sri Lanka has a bountiful supply of fish, and fish kulambu is the most common staple to accompany rice and vegetables. This Classic Kulambu curry paste has a rich, powerful scent of spices and chilli.
The thick saucy consistency of the gravy is achieved by adding concentrated coconut milk. Well balanced spices combined with the slight tanginess from the tamarind and Gorakka (Garcinia) with the kick from the chillies, and creamy sweetness from the coconut milk all combine together to deliver a complex, yet delicate taste.
If you are in for a spicy fish curry, we strongly recommend you to try making your own Fish Kulambu with our special blend Classic Kulambu Curry Paste. A firm flesh fish, such as Atlantic mackerel, monkfish, swordfish, trevally, tuna or halibut that will hold well together when stirred is important to Kulambu. The spicy and tangy coconutty gravy infused with the aroma and flavour of fish served on a warm plate of rice is heavenly and abundantly satisfying.
