Sweet and Tangy, golden mango with a chilli kick and warm spice
Open the jar and it’s glossy, golden and softly set, pieces of mango cooked down slowly with sugar and vinegar until they turn tender and jammy, sharp sweetness meeting a slow, warming chilli heat. Cinnamon, cardamom, clove and pepper hum quietly underneath, with garlic and ginger rounding it out. It’s sweet, followed by a slight tang, then a gentle build of heat.
This is a jar for far more than the curry table. Make a rich glaze for pan-fried prawns, spoon it over a sharp cheddar or a creamy brie, fold it into a cheese toastie, or pile it onto a ham or chicken sandwich. It lifts a curry or a bowl of rice and turns a plate of poppadums into something moreish.
We make it from the Kohu amba, a wild Sri Lankan mango whose name refers to the fibrous, coir-like texture of its flesh. Green-skinned and doesn’t turn sweet even as it matures, it’s a variety few would eat fresh, which is exactly why it’s prized for pickles and chutneys. These trees aren’t farmed; they grow of their own accord in home gardens and forest patches across the island’s wet zone, and our fruit is foraged by local collectors, gathered from the communities where it grows.
Ready to eat straight from the jar — no cooking needed. Always use a clean, dry spoon. Reseal and refrigerate after opening. Once opened, keep refrigerated and use within 4 weeks.
Mango has grown in Sri Lanka for more than two thousand years, old enough to appear in the island’s ancient chronicles, and woven into its kitchens ever since. Amba, the word for mango, turns up everywhere: in the cooking, in the gardens, even in old place names.
The island has its own family of native mangoes, each with its own character and season. But the best-loved trick in a Sri Lankan kitchen isn’t to wait for them to ripen, it’s to catch them green: hard, sharp and mouth-puckeringly sour.
Green mango with a pinch of salt and chilli is a childhood snack across the island. Cut into chunks and seasoned with salt, chilli splash of vinegar, it becomes achcharu, the tangy pickle sold at roadside stalls. Cooked down slowly with sugar and spice, that same sour fruit turns into chutney, heat and sweetness balancing the sharpness on the same spoon. That love of sour-meets-sweet-meets-fire runs right through Sri Lankan cooking, and green mango is one of the most moreish ways to taste it. We’d love you to explore it with us.
