Coconut Sambols combines the sweetness of the coconut with pungent chillies, tangy lime, and aromatic essences from the spices, offering a complex yet, fresh and mellow taste. Seeni Sambol is almost like a sweet onion chutney but with a lot more punch from the chillies and flavoursome spices like cinnamon and cardamoms, the tamarind adds a note of depth that helps to soothe the strong flavours and leaves a lingering taste at the back of your throat. Feel inspired to spread on soft cheese with crackers, or to make a spicy Seeni Sambol grilled cheese toast!
Katta Sambol, is the strongest and sharpest of all, with strong flavours of chillies, onions and rock salt - is not one for the faint-hearted! Traditionally eaten with Coconut Milk Rice (Kiribath) as a contrast to the cooling and sweet taste of the rice. It could almost be used as an aromatic chilli paste.
