In the box and you'll find everything you need for an authentic Sri Lankan curry and rice: a small-but-mighty jar of curry paste, a sachet of starter spices, creamy coconut milk powder, rice, and easy-to-follow instructions.

The curry paste, is the heart of the kit, a carefully layered blend of coconut oil, roasted spices, onion, tamarind, garlic and ginger, brightened with fragrant curry leaves, pandan and lemongrass. It's this slow build of flavours that gives Sri Lankan cooking its signature depth, and we've packed all of it into one little jar.

Starter spices, the traditional tempering mix of cumin, mustard, fennel and fenugreek seeds with dried curry and pandan leaves. Bloomed in hot oil at the very start of cooking, they release the aroma and warmth that every good curry is built on.

Coconut milk, the base that ties a Sri Lankan curry together, so we've included fine Sri Lankan coconut milk powder, naturally creamy, with a gentle sweetness that balances the spice.

White slender rice, sourced a leading producer in Sri Lanka that invests heavily in research and sustainable farming, working hand in hand with a wide network of out-grower farmers. The result is rice that’s as wholesome as it is delicious, cleaned, and ready to cook.

Easy to follow recipe card, to make a fragrant, home-cooked meal with minimum effort. We'll be sharing recipes over time so you can cook your way through making different dishes with the one kit.

Usage Information

If the jar is opened before use, close tightly, store in a cool place and use within 4 weeks. Keep all the packs unopened until you need them. Once opened, use them straight away. The recipe card suggests a traditional meat curry, but the pack itself contains no meat or dairy. So, the kit is yours to make into whatever meal you like Cooking with vegetables? Meat readily soaks up the flavour and heat as it slow-cooks, but vegetables cook faster and take on less of the spice — so start with a smaller amount of paste and adjust to taste.

WHAT IS PIRATTAL?

Pirattal (பிரட்டல்) is a general Tamil word that means "tossing and turning." In cooking, it describes a curry with a thick, glossy gravy rather than a runny one. Making a base rich enough to cling to and coat each piece of meat or vegetable. The name comes from the technique itself: the ingredients are tossed and turned as they slow-cook, keeping the curry from catching on the bottom of the pot while it reduces to that signature thick, sticky finish.

It's a much-loved preparation in Tamil cuisine, and one that rarely misses a place at a special family gathering or celebration meal. A Pirattal is traditionally made with poultry, meat (mutton especially) prawns, crab, potato, or deep-fried aubergine.

Although traditionally it leans on meat and seafood, the flavour lives in the paste and the tempering, so this kit makes just as rich a Pirattal with vegetables alone, whatever you love to cook.
