We've packed everything you need to make hoppers at home into one bag: milled rice flour, yeast as the natural rising agent, and coconut milk powder for richness, no tracking down fresh coconut milk or hunting for hard-to-find ingredients. Add water and a spoonful of sugar to activate the yeast, let the batter rest and rise, and follow the step-by-step instructions on the pack.

Easy to follow recipe card, to make crispy edged hoppers. Don’t have a hopper pan? You can still enjoy making fermented pancakes, and crumpets with the batter. We will be sharing recipes over time for the variations so you can cook your way through making different dishes with the one kit

What comes out of the pan is a texture unlike anything else at the table: a thin, golden lacy crisp edge, and a soft, spongy centre. The yeast lends the batter a gentle tang while the coconut milk brings a mellow, creamy sweetness, and because each one is cooked in a small, rounded pan, it sets into a natural bowl shape, a crisp-edged little vessel ready to be filled.

The classic filling is an egg, cracked into the centre as it cooks so the white sets into the base and the yolk stays soft, but hoppers are endlessly adaptable at any time of day. Load the bowl with a fried egg, avocado and a scatter of chilli for a slow weekend brunch; spoon in a sambol, chutney or dip and tear off the lacy edges to scoop; or have it sweet: coconut milk in the centre, drizzled with honey or treacle; a spoonful of jam; or fruit and cream. Enjoy however you fill, fold or tear them.

Made in small batches in Sri Lanka, pre-packed and shelf-ready, so a fresh batch of hoppers is only a rest-and-rise away.

WHAT IS A HOPPER?

Hoppers are one of Sri Lanka's most-loved dishes, a bowl-shaped pancake of fermented rice-flour batter that turns up on tables from morning to night. The English name is a colonial-era twist on the local word: Sri Lankans call them appam or appa, and hopper is the anglicised version the British landed on. Appa, in turn, traces back to the Tamil appam, roughly, 'cake of flour.'

The dish belongs to a wider family that stretches across the Palk Strait. Hoppers are widely believed to have evolved from the South Indian appam, carried across the Indian Ocean by traders and travellers and gradually adapted with local ingredients, coconut milk above all, which gave the Sri Lankan version its creaminess and fragrance. In Northern and Eastern parts of Sri Lanka it's traditionally fermented with palm toddy rather than yeast, similar to the process used in Kerala. The dish's ultimate origin is genuinely debated among food writers, which feels fitting for something this widely shared and this well-loved.

What isn't in doubt is its place on Sri Lanka’s meal tables. The egg hopper, a crisp little bowl with an egg set into its centre, is a morning staple in households across the country, and wherever you are in Sri Lanka, you're rarely far from a roadside kade where a cook is turning them out one after another.

They come in different forms, plain, egg, milk, and pani, where sweet treacle is mixed with the batter to make the sweet version. The string hopper, a different thing entirely, made from pressed rice-flour strands and steamed, rather than this poured batter. Traditionally they're eaten by hand, torn and dipped, alongside a seeni sambol or coconut sambol, a dhal, or a curry, the everyday centrepiece of a Sri Lankan meal.

This mix makes the classic hopper batter, the crisp-edged, soft-centred bowl that started it all
